I am thinking of moving to a VPS hosting and have a few questions.
How to deal with spam in the email accounts ?.

How about using Google Apps and using their spam filters?

If it's Linux based you could easily setup Spam Assassin and a few other bits and bobs to handle a lot of the incoming junk ..
